Black Rice Dumplings with Lemongrass Granita and Lemongrass Syrup

Thai cooking plays a very important role in the culinary world. Thai food is famous for full of flavor and use of fresh ingredients, mainly lemongrass. I used lemongrass as a core ingredient to prepare this dish. This is a sweet dish and can be prepared during thanks giving party and Christmas celebration.




For the lemongrass granita

5 tbsp sugar

Juice and grated rind of 2 limes

2 lemongrass stalks, roughly flatted with a rolling pin

2 tbsp vodka (optional)

1 cup water

For the lemongrass syrup

½ cup sugar

1 cup water

2 stalks of fresh lemongrass

For the dumplings

1 cup black sticky rice flour

½ cup grated coconut

2 / 3 tbsp milk

1 tbsp palm sugar

Pinch of salt



How to make the lemongrass granita

Place the sugar, lime rind and juice and the lemongrass stalks in a pan with water. Heat gently, stirring until the sugar dissolves then simmer gently for 5 minutes then allow to cool completely.

Strain the liquid into a rigid container then stir in the vodka. Freeze for 2 hours until almost firm then using a fork, break the mixture into large flaky crystals.

Lemongrass granita is ready.

How to make the lemongrass syrup

Chopped the lemongrass stalks roughly.

Mix sugar and water in a pan. Add the chopped lemongrass.

Bring it to a boil, simmer for 5/6 minutes and then switch off the flame.

Cool it completely. Strain the liquid into a glass.

Lemongrass syrup is ready.

How to make the Black Sticky Rice Dumplings

In a bowl, mix together grated coconut, palm sugar and salt.

In another bowl, mix black sticky rice flour and milk. Knead gently to get a dough.

Make 8 equal size balls from the this dough and flatten each of them with your palm,

Then fill it with the coconut and palm sugar mixture.

Reshape it into a ball.

Then steam the dumplings in a steamer for about 8/10 minutes.

Black sticky rice dumplings are ready.



How to serve black rice dumplings with lemon grass granita and lemon grass syrup

Spoon the granita into plates, top with 2 / 3 dumplings and pour some syrup into the plate. Serve black rice dumplings with lemongrass granita and lemongrass syrup. Get, set, go!!!
