A Christmas celebration is not complete without Cake. This is the time I bake cake for my near and dear ones. This delicious Christmas Caramel Cake has been a favoured gift amongst my well wishers during the Christmas season. This dark and spongy cake is an outcome of love that is rich in flavours from caramel.
- 2 cups plain flour
- 1 cup raisins
- 1 cup granulated sugar (for sugar syrup)
- 5 cups granulated sugar (for cake batter)
- 150 gms butter, at room temperature
- 6 eggs
- 1 tsp cinnamon powder
- ¼ tsp nutmeg powder
- 5 tsp baking powder
- ½ tsp baking soda
- 1 tsp vanilla extract
- A pinch of salt
How to make Christmas Special Caramel Cake:-
Heat 1 cup of sugar in a heavy saucepan until it melts and begins to brown.
When the sugar is melted and caramelized, immediately remove the pan from the heat. Add ½ cup water. The caramel will harden.
Place the saucepan back on low heat and slowly heat the mixture until the sugar crystals dissolve.
Let this cool and set aside.
Mix flour, baking powder, baking soda, cinnamon powder, nutmeg powder and salt until well combined.
Beat the butter and 1.5 cups sugar until fluffy with an electric beater. Add vanilla and mix gently.
Next, add 1 egg and beat. Then add a bit of the flour mixture and fold. Likewise, alternate between the eggs and flour mixture until they are used up.
Add the cooled caramel and raisins and gently fold in. Transfer the batter into a cake mould.
Bake for 60 mins in a preheated oven at 180 degree until the top turns a dark brown and when a skewer inserted into the cake comes out with dry crumbs. Take out the cake from the oven and let it cool completely at room temperature.
Dust with icing sugar.
