What to do then ? Cooking yourself is not really tough- believe me! All you need is a few basic ingredients and this space has the rest for you. Then, let’s cook this easy yet delicious Egg Curry.
Ingredients for Egg Curry:-
2 boiled eggs
1 medium size boiled potato, cut into 8 cubes
1 small size tomato, cut into pieces
1 tsp panchforon
1 tsp turmeric powder
1 tsp kasuri methi
1/2 tbsp mustard oil
1 green chili, chopped roughly
1/2 cup water
Salt to taste
How to prepare Egg Curry:-
Heat mustard oil in a pan on medium flame.
Add turmeric powder and pinch of salt into the pan.
Fry the boiled eggs for 2 minutes and keep it aside.
Add panchforon and chopped green chili into remaining oil and saute for 2 minutes.
Add the tomatoes and stir well. Cook until translucent.
Add the boiled potatoes and stir well. Cook for 5 minutes on medium flame.
Mash 2 / 3 chunks of boiled potatoes with the help of a spatula. This will help to get a thick consistency of the curry.
Add water and bring it to boil. Transfer the fried eggs into the pan.
Season with salt. Cook for another 2 minutes.
Switch off the flame.
Sprinkle kasuri methi. Cover the pan with a lid.
Rest it for 5 minutes.
Easy and delicious egg curry is ready to serve with steamed rice.
