Healthy Rice and Chicken Soup

Chicken is one of the unsung heroes of the daily diet of a non-vegetarian foodie. It is healthy, easy to cook and amazingly versatile. Chicken dishes are suitable for family meals all year round. 6 cups chicken stock

1 medium sized carrot, thinly sliced

1/2 cup diced chayote (squash)

1 cup cooked rice

150 gm cooked chicken, sliced

2 tsp finely chopped Burmese coriander (maan dhaniya)

Salt and pepper

Sprigs of fresh coriander, to garnish


How to prepare Healthy Rice and Chicken Soup:-

Put the stock in a large saucepan and add the carrots and chayote.

Bring to a boil, reduce the heat to low and cover it for 15 minutes.

Stir in the rice and chicken and continue cooking for an additional 7/8 minutes.

Add the chopped Burmese coriander. Season with salt and pepper. Soup is ready.

Ladle the soup into warmed bowl, garnish with coriander and serve.
