Whenever you go to any sweets shop, your eyes always look for Rasmalai. Rasmalai is such a sweet dish which is being loved by each and every one. The word Rasmalai is derived from two words Ras, which means juice and Malai, which means cream. The rich creamy texture makes this dish so special amongst us. Let us cook authentic rasmalai at home.
500 ml and 1500 ml milk
2 cups and ½ cup sugar
½ cup plain yogurt
5 / 6 cups water
2 cups Ice cold water
How to make Authentic Easy Rasmalai:
Condense the milk for Rabri:
Add 1500 ml milk to a heavy bottom pan and bring it to boil on medium heat.
Lower the flame. Stir it continuously.
Reduce the milk to 1/3rd. The reduction process will take approx 1.5 hours.
Add ½ cup sugar and mix well. Set aside.
Add 500 ml milk to a heavy bottom pan and bring it to boil.
Switch off the flame. Add yogurt and stir until the milk curdles completely.
Transfer this mixture immediately to a glass bowl and add ice cold water.
Drain in a muslin cloth. Hang it for about 45 minutes for the excess water to drain off. Chenna is ready.
Transfer the chenna to a plate and knead gently for about 2 minutes until smooth.
Make 15 equal balls and flatten them. Set these aside.
Prepare Sugar Syrup:
Mix 2 cups of sugar with 5 / 6 cups of water and transfer this mixture to a wok. Place the wok on medium heat and bring it to boil.
Add chenna balls to boiling sugar syrup and cook over medium high heat for 5 minutes. Place the lid and cook for another 10 / 15 minutes. Switch off the flame. Rest it for 30 minutes.
Take out the soaked chenna balls on a plate. Add these to rabri. Cook it in medium flame for 2 minutes.
Authentic easy rasmalai is ready.
Refrigerate and serve it chill.
